1½ lbs nugget potatoes, halved
1½–2 tbsp extra virgin olive oil
¾ tsp sea salt
½ tsp fresh cracked black pepper
2 cloves fresh garlic, minced
1 tbsp apple cider vinegar or fresh lemon juice (optional, for brightness)
¼ cup fresh parsley, finely chopped
Sprinkle some nutritional yeast on top for added nutrients!
Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
Wash and halve the nugget potatoes, then pat them completely dry to ensure crispiness.
In a large bowl, toss the potatoes with olive oil, sea salt, black pepper, and garlic until evenly coated.
Spread them cut-side down in a single layer on the baking sheet, making sure they are not overcrowded.
Roast for 30–40 minutes, flipping halfway through, until golden and crispy on the edges.
Remove from the oven and immediately toss with fresh parsley and a light splash of lemon juice or apple cider vinegar before serving.
