
Light, crisp, and full of fresh flavour, this Honeydew Cucumber Salad is the perfect seasonal side. Sweet honeydew melon pairs beautifully with cool cucumber, while fresh dill and a squeeze of lime add a bright, herbaceous finish. It’s simple to make, naturally refreshing, and ideal for days when you want something light but flavourful.
2 cups honeydew melon, cubed
1–1½ cups cucumber, cubed
¼ cup red onion, finely diced
¼ cup fresh dill
1 cup crumbled feta cheese
2 tbsp olive oil
1–2 tsp fresh lemon juice or lime juice
Salt and freshly cracked black pepper, to taste
In a large bowl, combine the honeydew, cucumber, and red onion.
Add the fresh dill and crumbled feta.
Drizzle with olive oil and lemon or lime juice.
Season with salt and pepper.
Gently toss to combine, making sure the feta stays in small pieces.
Chill for 10–15 minutes before serving to let the flavours meld.
