1–2 long English cucumbers
Fresh dill
Fresh mint and/or parsley
Crumbled Feta (optional)
¼ red onion
Lemon juice
Olive oil
Salt + pepper
Thinly slice the English cucumbers and red onion, then place them in a bowl. Add fresh herbs. If you prefer a softer onion flavour, soak the red onion slices in cold water for 5–10 minutes first, then drain before adding. Toss with lemon juice, olive oil, salt, and pepper. Top with crumbled feta, if desired.
