
Golden and crispy on the outside, tender on the inside, these baked zucchini fries are packed with savoury parmesan flavour. They’re an easy, healthier alternative to traditional fries and make the perfect snack, side dish, or party appetizer. Serve them hot with your favourite dip for a crowd pleasing bite everyone will love.
2–3 zucchini
2 egg whites or 1 egg
½ cup flour
½ cup panko breadcrumbs
¼ cup grated parmesan
Garlic powder
Salt + pepper
Olive oil spray
Preheat oven to 425°F and line a baking sheet with parchment paper.
Cut zucchini into fry-shaped sticks and pat dry.
In one bowl, whisk egg. In another, mix flour, panko, parmesan, garlic powder, salt, and pepper.
Dip zucchini into egg, then coat in breadcrumb mixture.
Arrange on baking sheet and lightly spray with olive oil.
Bake 20–22 minutes, flipping halfway through, until golden and crispy.
