Full of goodness from old fashioned oats, chickpeas and walnuts with the fun of chocolate chip and peanut butter!
Ingredients
1C firmly packed brown sugar
1/2C natural peanut butter
2 large egg whites
2 tsp pure vanilla extract
1 can chickpeas, drained & rinsed
3/4C chopped walnuts
2C semi sweet chocolate chips
2C all purpose flour
1/2 C old fashioned oats
1 tsp baking soda
1/4 tsp salt
Directions
Preheat oven to 350F. Coat a baking sheet with cooking spray.
In a large or bowl of an electric mixer, beat the sugar and peanut butter with a wooden spoon or on medium speed until smooth. Beat in the egg whites and vanilla, then the chickpeas, walnuts and chocolate chips. (If using a standing mixer, partially cover the bowl with a dish towel to keep chickpeas from flying out!)
Add the flour, oats, baking soda and salt and mix on low speed until a thick dough forms.
Drop the dough by the tablespoonful onto the baking sheet, spacing the cookies about 2 inches apart. Bake until the cookies are golden brown and just set (approx. 20 minutes). Do not overbake! Transfer to a rack to cool. Store in an airtight container for up to 3 days.
