We all know having more veggies is generally a good idea. If you look back to yesterday, how many servings can you recall eating? With one serving of veggies being 1 cup of leafy stuff or 1/2 cup other veggies, try to see how many servings you are getting. Looking at what you eat now, just add one more to that and make that your daily goal. In 2 weeks, add one more to your daily goal, and so on. I see a new motto, “Just add 1 more!” - for veggies that is!
One easy way to meet your goal is to try cauliflower rice. Regular rice or grains in a meal can feel heavy and take a long time to cook. Cauliflower rice is light, versatile, and can be ready in about 10 minutes. It is also a great way to add in another serving or 2 of veggies to your day! It can be lovely for breakfast too!
Take your head of cauliflower, trim off the leaves and wash it. Shake it well or wrap in a towel to remove excess water and dry off in order to not end up with soggy results. Chop into 4 quarters. Using a box grater or food processor, grate into small pieces - about the size of rice.
Then, simply sauté it in a skillet over medium heat with 1 Tbsp oil (I prefer to cook with Coconut Oil) for about 5 to 8 minutes. Season with your favourite spices, even just unrefined salt and pepper is yummy, but the options can be endless. Now add it to your meal and enjoy!
